Yeast is one of the most overlooked ingredients in homebrewing. However, the selection of yeast can make a vast difference to the characteristics of the finished beer.
During the history of brewing, various types of malted and unmalted grain have been used to make beer. The variety, where it is grown and how it is malted all affect the taste and appearance of the end product.
Beer with no hops would be very sweet and fairly tasteless. It's the bitterness of the hops that balances the residual sweetness of the malt, and adds aroma and flavour.
Hops are the flower cone of Humulus lupulus, a vine related to cannabis. Only the female plant produces flower cones, which are light and the consistency of tissue paper.
